Gooey Butter Cakes..

How, I hope you fellow recipe bloggers haven't given up on me..I really haven't been cooking too much, with the heat of the Georgia sun, I have tried to stay out of the kitchen, and we have been super busy this summer, but it has been calling my name....Plus, I can only go so long without being back in my kitchen baking up some good treats for my family...although, I am teaching the girls healthy choices, we still splurge every now and have some good, delicious, very fattening treats..that is what a treat is suppose to be anyway, right..in moderation.. So, what better recipe to try when you want to eat lots of butter, than Paula Deen, right..lol, this is her butter cakes, but I add chocolate chips to mine, which makes it even better...For any of you who visit or want to visit her restaurant, they are always on the dessert menu if you order her buffet, it's usually some type of butter cake, but to me you can't beat fresh out of the oven butter cakes..:)

Well, here is a delicious treat I made for 4th of July, one of the desserts, the other was homemade banana pudding, which I will post later, made with cream cheese..yummy..but this was for the kids and they loved them, they are delicious and you must try them!!!

Gooey Butter Cakes with Chocolate Chips

18 1/4 ounce package of yellow cake mix
1 egg
1 stick butter, melted.. (told you it was lots of butter)

Preheat oven to 350 degrees. Combine ingredients and mix well. Pate into lightly greased 13x9 pan. Prepare filling.

Filliing:
8 ounce cream cheese, softened
2 eggs
1 teaspoon vanilla
1 stick butter, melted (yep, that makes the 2nd stick of butter in this recipe)
16 ounce box powdered sugar
chocolate chips (I added about 1 cup) just add however much you like, you could even do half with and half without..

Beat cream cheese until smooth. Add eggs and vanilla. Add butter, beat. Add powdered sugar and mix well. Spread over cake mixture, now add your chocolate chips if you want them, don't mix just add to top. Now bake for 40-50 minutes.

    I've got to try this with the chocolate chips, it looks SO good :)

    The kids and I still comet here a lot just to listen to your music while we cook or do crafts :)

    I wish I was enjoying that Georgia sun ;)

    We were so used to the other music and in a particular order...we just don't know what to DO with ourselves! Ha ha.

    Nutmeg Nanny..I love that name, could say it all day..thank you girlfriend..I am still here, I tell you I am training, raising my 2 toddlers, and a wife takes up most of my time and I have to remember to add more recipes every week, I have put it last this summer, we have been having too much fun this summer, but back to the grind soon, so more recipes coming..
