Okay, I am way overdue!!


Yes, I am way overdue for a recipe, as many of you Mommies out there, we get busy and before you know it a month has come and gone. I am trying to do better and post more recipes at least once or twice a week. With me training and not being able to eat them, I have to test on my husband, who now has decided he has to whip into shape for spring and summer too, I guess I might be rubbing off on him..hehe...but still have my girls to bake for and he has told me I can bake whatever I want for him on the weekends, so hey, I still have weekends to bake for him and my blog, so it all works out...I am sure you will not want to make this if your trying to whip into shape for summer, but for all you others out there, this one is for you, and hey you can save it for a cheat meal like I do every now and then, we can't completely take good southern food out of diet, now can we....
Now, to my sweet friend Lia in England, go out and make those sweet boys of yours this pie this weekend, they will never leave home...lol

Chocolate Pecan Pie

1 deep dish pie crust
3 eggs
2/3 cup sugar
1/2 teaspoon salt
1/3 cup butter, melted
1/2 cup chocolate chips..I used a little bit more because my man loves chocolate..
1 cup corn syrup
1 cup pecan halves

Preheat oven to 375 degrees. I mixed the eggs, sugar, salt, melted butter and corn syrup with my whisk for a minute or so. Stir in pecans into the mixture. Put chocolate chips on bottom of pie shell and slowly pour pecan mixture over the chocolate chips. Bake for 45 minutes until set. Cool before cutting into it...I had to wrap my pie crust after 30 minutes to protect it from burning, I wish I had that cool gadget you just place over your pie shell, but I don't so I just wrapped foil around my crust....
top with ice cream if you like......Delish....

I cannot tell you how much my family enjoyed this pie, even my girls who normally don't like pecan pie at all, they finished their whole piece...and well, my husband LOVED it...try it it's so easy and great for Easter too..

Place as many chocolate chips as you want, I used a little more than 1/2 cup..

You know this is going to be good..

It's just asking to be topped with vanilla ice cream....

  2. Hi April, It's me again :) Everyone LOVED the pies last night. We topped them off with some Blue Bell homemade vanilla, and it was a little too good.
